Folding the mat with nothing to place in between will make the folded up mat stick to itself and have a hard time pulling the mat apart to lie flat for the next use. I hope this helps. **Q: Can this be used for rolling out fondant?** A: I cannot answer this because I have never worked with fondant. If it is anything like pastry dough, I guess it can be used. It has several deep creases that do not appear as though they will ever go away. I bought it to use under my dish drying tray - luckily at least 85% of the mat is covered by the rack. The heavy weight of dishes did not help to smooth out the creases. If I had bought this to be in an area where it would be seen in it's entirety, I would return it as it is sloppy looking. I bought the same color mat from this company, but a different size that is the earlier model. That mat was shipped rolled up in a box and sits flat on the counter. The new and improved version is certainly not an upgrade in quality. I bought this newer model because I needed the larger size. I would not use either mat as a baking mat. I have the type of baking mat sold here on amazon that is a tan color with fibers in it and a grey border with the rolling lines on it. That type of mat sticks to the counter, is smooth and thin tho work on, does not have fold lines and working really well for rolling things out. I frequently use it to roll out tortillas.
