Does it have a strong odor/fumes? I assume it will because it is a varnish.

Not at all. Being a water based varnish, it does not have the strong odor associated with other types of varnish. Not to be compared to spray varnish, either.

Does this dry very matt or does it have a sheen?

It has a very matte finish when it dries.

Is this dishwasher safe?

No. It is not a product I would use on anything that would even go into a dishwasher

Does this dry very matt or does it have a sheen?

It is matte. It is invisible and doesn’t change the appearance of your chalk paint.
