Can this be used with the GoPro Hero5?

My guess is yes. The sandmarc pole mount is universal that attaches to GoPro mounts (the suction cup, the chesty, head mount, sticky etc). GoPro would not make a camera that could not universally connect into there existing mounts.

Does it have a 1/4" tripod screw to mount other cameras (i.e. Sony Action Cam) or is it just the gopro mount?

Yes, you can disassemble the tripod mount for GoPro and use it for all other cameras with a 1/4" screw.

If I take it in the ocean, will the sand mess up the lock/unlock functions?

I have used it in various environments including the ocean and it is still fully functional. Highly recommend getting this product. Just brought it to Honduras and used it both at the beach and at a construction worksite. Performs very well.
