Does it work to change the switches on a mechanical keyboard ?

Have not used it for this purpose but it comes with the soldering metal

Would it work for jewellery making, melting silver sheets or copper ?

NO SOLDERING IRON CAN MELT SILVER OR COPPER!!!!!! or at least in a usable fashion, generally an oxi-acetylene torch is used. I use a mini butane torch for soldering jewelry. usually you use a torch, not a soldering iron for jewelry.

Can i use this tool for put holes in plastic

Well it's not really made for that but i suppose if you wanted to melt holes in plastic it would do it but your soldering iron wouldn't be much good anymore for soldering, why don't you just use a drill and a drill bit and driil the holes in your plastic I think you would have alot better luck
