Kasseri is an outstanding table cheese. It is creamy gold in color and resilient in texture. It has a mild, buttery taste with a hint of olive flavor. This cheese is waxy when refrigerated and it becomes oily when it reaches room temperature. Due to it's high melting point, Kasseri remains solid when heated and it is usually grilled or fried in olive oil. It is delicious plain or sauted as in the Greek dish saganaki.

A: I refrigerated it!

**Q: The cheese I’ve had are more salty, this isn’t, is it because it’s fresh?**
A: I don't believe so. Kasseri is always a bit salty and adds to the unique taste

**Q: What are the ingredients?**
A: 75% sheeps milk; 25% goats milk

**Q: does it spoil**
A: Cheese doesn't tend to spoil, but it will grow mold.  I cut what I was going to use pretty quickly, then sliced the rest and froze it.  I have done this in the past and it works out fine.  It never stays in the freezer all that long, though.
