How many trivets do you get with each order?

The large ones come one per package. The minis come with two per package.

Anyone use these in a pressure canner?

I use this in an 8qt stock pot for water bath canning, but not for pressure canning. I would stick to metal racks in pressure canning because of stability issues.

Can this be used between a pot/pan and a radiant heat glass top stove?

I do not believe that silicone is meant for direct heat. I would not suggest it :)

Would I be able to use this on my wood table with out it leaving a heat ring??

I would think so. It holds the hot pan completely away from the table surface. Also silicon shouldn't transmut the heat thru so it would be fine iny opinion.
