Review: An Essential Tool for Artisan Breads - As a baker who has delved into the realm of artisan bread will tell you, that wonderful "big hole" texture requires a VERY wet dough. But wet doughs will not hold their shape, tending to puddle into would-be ciabatta. It is essential, therefore, in the quest for artisan bread, that the dough be supported at all times. Hence, these baskets. I've delayed reviewing these until I had used them a while. I have now used them weekly for close to 2 years. So I can say with assurance they are durable. They are right-sized. They are lightweight, easy to handle and will stack in your cupboard. The linen liner is a dramatic touch, but useless: you'll want to line the baskets with parchment, so you can lift out the proofed loaves. How else could you? And placing dough directly onto the linen would stick instantly, anyway! You'd spend your life laundering the liners. If you aspire to artisan bread, you will need some sort of bread proofing basket. These are a fine choice.
