Will this slip on a hot Le Creuset skillet in the oven (after the cooking is done), to make it easier to take it out of the oven?

Yes it will, i have done this. Still gets hot pretty quick though, as oven temp is what it is. This product is just like a square silicon oven mit, those get hot as well. Anything you would use to grab out of the oven will eventually get hot. The one thing with this product that you do need to be careful about it is, if the handle of the pan, or even this product has any kind of grease/oil on it or in it, when the pan is hot in oven or on the cook top, it can make for a very slippery grab sometimes. Make the pan feel like it may slip or "squeeze" out of this product, if that make any sense.

What temperature can it go up to in an oven?

It is, and yes it gets hot. I use my lodge holder. Watch out with gas; they all get hot
