According to the drawings in the description, it looks like this fits a 7mm hole. Is this correct?

The main part of body yes but if you include the threading required to hold in place I measured approximately 7.85mm

What is maximum panel thickness? My panel is .104" (2.65mm).

I did a quick test for you. I 3D printed a panel with ~2.6mm, ~2.8mm and ~3.0mm thicknesses and tried to mount it. With a thickness of 2.6mm 2 threads are clearly visible and I was able to hand tighten the included nut. Even when mounting on 3.0mm I was able to tighten the nut with the help of a needle nose plier so think it will work fine with your panel thickness. I hope that helped.

Is there a wiring diagram for this?

No. The ground is obvouis. But I took a plug and did a continuity test to find out which was ring and which was tip.

How do you tell which prongs are left, right, and ground?

Facing the connector side, place the triangle up. From left to right, ring/sleeve\tip, which translates to right/ground\left.
