I've already made like 5 things from this.. love it
bomb ass cook book. Try the plantain pizza; you will NOT be disappointed. My WHOLE family LOVED IT. Irish stew. I've made this twice so far. Uses hard cider.. MmMM.**Have to come in and edit my review, after reading some.**Yes there are a lot of recipes that you CAN use rice, rice noodles or white potatoes, but if that is not YOUR thing is sub out what is your thing.Example: Chicken Biryaniit does call for Basmati rice, which is easy on digestion and has a glycemix index of 55, which is pretty low but if that is not your thing and you find it hard to digest then sub out cauliflower rice. Easy.Paleo is a template, a spectrum, a guide, its designed to get rid of processed JUNK out of our kitchen and lifestyle, it is NOT a box that you fit yourself in.I know a lot of people, who follow paleo, who WILL eat raw cheese, rice, potatoes (gasp). If YOU don't want rice, for hopefully educated reasons, then by all means sub in cauliflower rice, which the BOOK does say.I know a lot of people who are paleo who cannot tolerate tapioca flower, or arrowroot, does that mean we should omit that too? Do what is good for your body but know the reasons first, not because someone on their blog said its okay or not okay or because that is what the masses are doing. If you don't want rice noodles, by all means use alternative, as stated by the author. But please don't come on here berating the author for thinking outside the box and thinking on her own. I find it great that so many bloggers are going out of this rigid box.

Yummy!
I really love this book. As previously mentioned, there are many recipes that are not strictly Paleo, but you can easily alter those to your personal diet interests. I like Paleo because I need low carbs to maintain my weight, but I have an allergy to Dairy, so this works for me... so many low carb meals have tons of dairy so they just don't work for me. The recipes are simple, and delicious, and there is a wide variety of cuisines that should suit the pallets of just about anyone. The one pot thing is what really helps, I like making simple meals that don't require a bunch of dishes to wash ... especially on weeknights. I got the Kindle version, simply because it is easy to store in my iPad, the only thing I would change is how the pictures are displayed with reference to the text... I would prefer that a small picture was available with the text so I can see it easily.

My compliments to the chef!
This has fast become 'the' favorite in my Paleo cookbook library! You can tell that the author is a fellow foodie & true lover of good food just by the taste & beauty of her recipes. Each recipe makes you feel like you're not following a certain type of 'diet', but more like you are indulging in really delicious & comforting food that just so happens to also be good for you too. The recipes are easy to execute & I like that they use ingredients that are easy to find and have on hand. This book is beautiful & every picture is totally drool worthy. My compliments to the chef on this one!

Missing Recipes
The book itself seems great as far as recipes are concerned. There are many I would like to try. I'm sure this is an oversight as far as my 3-star rating but, I received the book and there were over 20 recipes that were torn out of the book itself. If it were a complete book I would give it a 5-star rating but, there were so many pages ripped out that I was surprised this wasn't caught. I can understand one or two pages ripped out and I probably wouldn't even worry about it. But, there were too many recipes that were torn out. Please note that the book itself is great but, I wish I would've received a new and complete copy.

Delicious Flavors
I am an experienced home cook (and baker) who has gone Paleo and grain-free per doctor's order (due to food intolerances for 2.5 years, hormone imbalance, and the latest: pre-diabetes). To date I've cooked five dinners from this cookbook and what my family loves the best is the great flavor and the new-to-us meals. I was tired of the same old-same old meals I make and was bad about planning, so have been planning dinners from One Pot Paleo, making a weekly shopping list and getting all I needed for the week on Sunday. It's been a blessing.I have a few complaints which justifies the ranking of 4 stars = I Like It instead of a 5 star rating.First off, the serving size and portions. Some recipes are for 2 servings and some are 4 so pay attention! I am cooking for two adults and one teen boy. I no longer eat large quantities so I am pretty much okay with eating just what the author recommends (she does not recommend adding one more vegetable serving or a salad on the side). My husband claims he's starving after one or two portions. My teen being a picky eater either eats mainly the meat portion then is still hungry (his fault I know). Basically to ensure the three of us get enough to eat we need to make more food. Herein lies the problem with one pot cooking. In some cases you cannot just add more veggies as only so much fits in the cast iron pan, for example. We have started making a second veggie side dish which uses another "pot" so there goes the whole idea of washing less. Also if I use a big bowl to mix ground beef, a food processor to chop up mushrooms then a cast iron pot that is a lot of washing so again it's not one pot to wash. But let's not quibble. This is not a strict Paleo ingredient cookbook. The publisher states in the preface that this is refreshing to them but for those of us who can't eat white rice to see the tempting photo and to realize we need to do a substitution is a little frustrating. I want a strict Paleo cookbook so I'm relieved of that feeling of deprivation. Yes, the author put a substitution list in the beginning (cauliflower "rice" instead of real rice), how to substitute red wine vinegar, etc.The last bone I have to pick is that using the one pot extends the cooking time in some cases so between the chopping of the vegetables you have two stages of cooking. For example the steak is fully cooked then removed from the cast iron pan then the asparagus is cooked after. If you had used two pans it would have been done about ten minutes earlier. However using the drippings and flavorings from the meat to cook the asparagus adds flavor.Anyway we are enjoying these new flavors so I rate this 4 stars = I Like It

You won’t regret it!
This book is amazing! So easy and tasty and most importantly, unlike most cookbooks, very little tinkering with ingredients is necessary, it comes out ready to eat! The only issues I’ve had is when I fast and loose it when I don’t have some of the ingredients and do it anyway. Everyone I love is getting this as a gift!

OK but not strictly paleo
Just received this book so I haven't tried any of the recipes yet. I have had a brief read through as I was excited to get my hands on it because I bought it to travel with. The recipes look great however there are recipes including rice and dairy which aren't Paleo and as a person who has to avoid these it is disappointing to see.
