Makes amazing rainbow cakes, if you have thin tins. Fun to match the icing to the colour of the inner as you go. Used for a raspberry vanilla layer cake recently with layers of cream and pink. Used raspberry essence and it was amazing! **Q: Whenever I use this it never goes a dark colour? Why?** A: I have used their Aztec blue for my macarons and the colour was pretty dark. Although, the colour faded a little after cooking.
