Sehr schönes Messer
Pro:Heft und Klinge sind sehr gerade.Schön dünne und flexible Klinge.Sehr scharf, der "Rasiertest" auf dem Handrücken fällt positiv aus ;-)Gefälliges Design.Contra:Wenn überhaupt, würde ich nur die minimalen Spalte zwischen Griffkunststoff und dem Metall bemängeln. Aber das ist wirklich keine große Sache.

Sharp
Very nice blade. Glides through filleting pork and steak beautifully. I put it to my diamond steel when it needed a touchup and its almost a scalpel. Heavy handle, flexible blade, well balanced.If I had any complaint it's the amount of packaging and fluff. As a gift, perhaps worth the packaging - which is quite special - but as a kitchen knife, all of the packaging got thrown out. So wasteful given it probably added $10 to the price.

In general, I like the Dalstrong knives, but can't count on them being sharp out of the box.
I ordered this knife once before and returned it because it was dull. After a few months, I decided to try it again since I needed a knife of this type. Sad to say, again I received a dull knife. This time, I decided to keep it an sharpen it myself, but shouldn't be necessary with a new knife that costs as much as this one does.I do like the Dalstrong knives for design and balance although the omitting some of the paraphanalia included in the box might help to reduce the price. The box it comes in would be nice for gifting, but I don't keep either the box or the paraphernalia. I do like that they include a sheath to protect the blade if knives are kept in a drawer.This knife is a less flexible than that the 8 inch Shogun Series boning knife and has a wider blade, but it works great to cut thin slices of meat once it is sharpened. Since the blade on this knife is 16-18 degrees, and the blade angle is 15-17 degrees, I used an Asian knife sharpener to sharpen this knife. Western knives usually have a 20 degree blade angle. When a knife is sharpened to a smaller blade angle, it will not stay sharp as long, but it will be sharper than a wider blade angle.I hope this review was helpful for you. I will update this review if my opinion changes.

This Made Trimming a Brisket a Lot Easier
I bought this specifically to trim briskets with before smoking them in my Rec Tec 700 smoker (also reviewed here on Amazon). This knife performed superbly the first time I used it and I'm extremely happy with it. The knife sliced through the fat like butter and made trimming the brisket significantly easier than it had been with my other knives. Also, I tried another device (Qwick Trim Brisket & Meat Trimmer) that nearly cut off a portion of my thumb and I felt was too dangerous to ever use again. As a result, I bought this knife after that incident and I'm very pleased with the knife's ability to cut through brisket fat and also the price I paid here on Amazon. I definitely recommend this product if you need to trim a brisket or clean fish with it, too.5/5 stars and a full recommendation from me for sure.
