Each brick when frozen weighs ~450g (just slightly less than a pound).

is this product good/safe for keeping my food cool in a lunch box?

Yes, they are really better than the gel ones, I specifically bought these because of the foam as I has some before and the worked really well. I would probably use 2 or more depending on the size of your lunch box.

When not used, should I keep them in the refrigerator?

I don't, I just keep them in the empty cooler, make sure you put in the freezer a good 48 hours before you plan to use them.

Why is the two pack more expensive than buying two one packs?

I don't know; ask Amazon. That seems true with many of their offerings.
