What is the actual weight of the sea urchin? Is it fresh? Do you send it in a freezer?

This product is NOT fresh sea urchin. It is processed into a paste that is then pasturized and bottled. It has a long shelf life, but must be refrigerated after opening. It has a slightly salty and distinct urchin taste. It goes well as a condimint with many traditional Japanese dishes, sea foods and noodles, or blended with soup bases to give them a sea-fresh flavor.
