My wife got me this as a gift. The larger gauge is missing 1 of the adjusting screws for the lock mechanism. Can I get a replacement screw?

You should request a new one because yours is defective. They won't send you a new screw.

Is this gauge available in a stainless steel version?

They probably have it but not by this brand
