Very Happy with this machine
3/3/2014. Update: One issue has come up that is worth mentioning. First of all, I would like to give credit where credit is due and say again that the machine seems to be well made and really quite sturdy. This is all good. The one issue is that the collapsible paddles do not seem to want to stay on the spindles during the mixing cycle. I have had them come off several times during the same mixing cycle in fact. If one comes off, it can jam with the other paddle and scratch the pan, which has happened in my case. The paddles do slide off the spindles quite easily. My solution at this point, and it is not a very good one, is to add a sliver of toothpick beside the spindle when I slide on the paddle. This seems to work, but this is an engineering issue that could be improved. Other than this, the machine works well and seems solid. I would still recommend buying this machine. I have also modified my recipe below to only include 1 1/4 teaspoons of yeast instead of 2. I find that 2 teaspoons may cause the dough to rise too much and then sometimes collapse somewhat. Trial and error. 1/6/2014. "Santa" brought this machine this past Christmas and so far I have been very happy this machine. It arrived in perfect condition, with all accessories, including the two collapsible paddles as well as the two upright paddles. I had an older Breadman for literally the last 17 years that saw fairly frequent use and was still working, although the pan had begun leaking, so I thought it was time to upgrade to a new machine and put this one on my Christmas wish list :). My previous Breadman had worked for a long time so despite some negative reviews for this machine, I decided to stay with the Breadman brand and give this machine a try and I can say that I am very happy so far. I have made several types of bread and the only quibble I have is that when I have raisins in the fruit and nut dispenser, they do not seem to want to drop into the bread pan. This is likely due to raisins being inherently slightly sticky as well as the dispenser opens to about a 45 degree angle, something that could be made to open a little steeper, but I now simply add the raisins with the rest of the ingredients at the beginning. Problem solved. I have found this machine to be very substantially quieter than my previous bread machine, which was a pleasant surprise. Also, the texture of the breads also seem to be substantially improved, another pleasant surprise. The time for a finished loaf is slightly longer than the previous machine but I have found that this is no problem. I have not tried the quick bake cycle yet. Again, I am very happy with this machine. it looks good and works great. I would also say that it appears to be quite well made. Everything fits tight, in particular the pans, so I do not see that this as being a problem in the future. the paddles seem to fold down for me, which seems to be an issue with some reviewers, so that is also good news. I also like the versatility of being able to bake two different loaves of bread in the smaller pans. And they are not that small. One additional note on the recipes. If you are trying to bake plain white bread or a light white and whole wheat mixture, say, 2/3 white flour and 1/3 whole wheat, the recipe calls for 4 cups of flour. I find the I only need 2 and 1/4 to 2 and 1/2 cups of flour in the large pan and that is plenty. Any more than this and you will have your bread pan overflowing, guaranteed. Here is a quick foolproof recipe for white or light whole wheat. I use slightly more than one cup of water warmed in a pan, add 3/4 tsp of salt, 1 and 1/2 tablespoon of butter and 2 tablespoon of brown sugar. Heat the water enough to melt the butter while stirring the mixture. Pour this into the large bread pan. Add 2 and 1/4 cups of white bread flour to the bread pan, (or substitute 3/4 cup of whole wheat flour), add 1 1/4 full tsp of quick rise yeast and set your machine settings to the lightest crust and smallest loaf size and press start (or your timer) and you are done. You might need to add a tiny amount of additional flour or water to get a good dough texture, which should be just moist enough to be slightly sticky to your touch but still be dry enough that it remains in a dough ball. This is very simple and works every time. You can also add raisins or cinnamon (1 tablespoon) to this for added flavors. So in short, I can highly recommend this bread machine. It looks good and works great. Very happy. And I will update later.

DO NOT PURCHASE!!! BAIT & SWITCH
I Just spoke with APC, the warranty company and was told that the model that they replaced my broken machine with is their top of the line machine and is more expensive than the original model and has more features. Anyone that is capable of reading can compare the two models and know that there is no way that the replacement model is the better, more improved and more expensive model. The warranty person also told me that Amazon sells used models, not new. On the breadman website, the replacement model sells for $129.99, even at that price, there is still a difference in price of $70.00. This replacement model only has one bread pan, not the option of two 1-lb. loaves and the actual bread pan is shaped differently than the one that I purchase originally. The loaves are too big to fit in sandwich bags, they will only fit in quart size bags or larger. The purpose for my original purchase was to make sandwich bread for my kids lunches as a healthier option to store bought bread, well I guess they'll be getting supersized sandwiches now. This company practices bait and switch, I would not advise purchasing from them, this should be illegal. February 15, 2012 You can read my original review below. I was pleased with the quality of the bread that this machine produced. However, the machine only lasted 4 months. I made bread once per week, so it did not get a lot of wear and tear. Unfortunately, when the paddles decided to quit it was beyond the replacement period for Amazon so I had to work with the manufacturer to resolve the issue. After placing a call to Breadman's warranty dept. (APC), I was told that this machine is no longer in production, so the replacement would be a different machine that had similar functionality and comparable in price. After cutting the cord and paying the S&H, I received the replacement machine. Where do I begin...... 1. The replacement machine is model BK1060S ($88.99 on Amazon). I paid $199.99 for the original machine that broke. That is a difference of $111.00. 2. The replacement machine is not new, it is refurbished and has a few rust marks on it. So not only was my replacement $111.00 cheaper than my original purchase, it isn't even worth the $88.99 that it's being sold for "new" on Amazon. 3. I called Amazon customer service to let them know that they have a product that is being sold on their website that is no longer in production and replacements to customers are of a cheaper model with less features. Hopefully, Amazon will do the right thing and take this machine off of their site, so no other customers will get ripped off like me. I regret my decision to purchase from this company, they have unscrupulous practices. I hope that others will look at this warning and choose to purchase a different brand. BUYER BEWARE!!! *****Original Review***** I have never written a review, but felt that this breadmaker deserved a 5 star rating. I received my Breadman BK2000B yesterday and made my first loaf last night. I made a classic white loaf of bread and cut the white flour by a third and used whole wheat flour in its place. My loaf of bread came out beautiful! The crust was a beautiful golden color, had a great texture and the taste was phenomenal! I just returned a Panasonic SD-YD250 because it stopped working after 3 weeks of use. With the Panasonic, I was still trying to figure out how to get a nice loaf of bread. The crust on the bread that was made in the Panasonic was always hard, thick and slightly burnt on the bottom, no matter what color setting you set the machine on. The bread was also very heavy and not very palatable, I thought it was something I was doing wrong and just needed to tweak my recipe, but after making one loaf of bread in the Breadman BK2000B, I realized that it was not my recipe but was the Panasonic. I hope this machine is built to last because if it keeps putting out loaves of bread like the one last night, it will be getting plenty of use in my home! *****UPDATE***** I'm still loving it!!!! This breadmaker is amazing. I haven't had a bad loaf yet. I think this breadmaker is underlooked for more popular brands and many may be missing out! I have made an average of 3 loaves of bread per week since I received it, and each loaf has been delicious. The loaves are shaped like the loaves of bread from the market and work great for making sandwiches for the kids for lunch and making toast. The breadmaker is very easy to clean, compared to the Panasonic, which mixes the ingredients so harshly that flour and dough are thrown outside the loaf pan and burned onto the heating elements. I haven't had anything thrown out of the loaf pan with the Breadman, no cleaning of the heating unit has been necessary and a quick soak of the loaf pan/wipe out and we're all set to go. If this breadmaker continues performing as well as it has, this may be one of my best purchases from Amazon. The paddles have remained in the loaf pan and not in the bread *****UPDATE***** February 2012 I'm sorry to report that my breadmaker has gone the way of so many others that have reviewed this machine. One paddle stopped working and the other paddle began making a loud noise. Of course this took place after I was past the point of returning it to Amazon. I called the manufacturer and was asked to cut the cord off of the machine and return it to their warranty dept., along with $7.50 for shipping and the breadmaker would be replaced with a comparable model. I was told that this machine is no longer in production (which with the level of complaints for the same issue, it should be taken out of production), however I was not able to be told what it would be replaced with. It is scheduled to be delivered tomorrow, so hopefully the replacement is truly of comparable value and functionality, considering that this machine cost $200.00. I have looked in vain on Amazon and their website and thus far have not been able to find a comparable machine that is made by them. I will update upon it's arrival and first loaf.

Breadman 2000B - They Got It Right.
I saw this model while searching for 'Collapsible Paddle Bread Maker'. I figured this is it. Then I started reading reviews. People loved it, or hated it. I looked at the dates of the reviews, figured Breadman read them too, and had addressed all the problems people were having. I pulled the trigger and bought one. They fixed everything. People complained of missing parts. Mine came with manual, recipe book, measuring cup, multi-size measuring spoon, two collapsible paddles, two rigid paddles and dough hook removal tool. Everything that was supposed to be in the box, was there. First I used the two 1lb bread pans, using my tried and true recipe. Bread was actually better than my old machine could do. I think the taller pans knead the dough much better. They use non-folding paddles which come out of the bread easily because of the shape. They are more vertical than my old breadmaker. Then I made a 2 pound loaf in the big pan with the collapsible paddles. The complaint with the collapsible paddles was they scratch the bottom of the pan. These paddles have a rubber grommet to prevent the non-stick coated metal paddle from touching the the pan itself. I don't know if the older ones had the rubber grommet. There is still a 'dent' in the bottom of the bread, but not an open hole like you get after removing the paddle. Bottom line here is it seems to be a great machine. Buy one, you won't regret it. Update Feb 6, 2014: My neighbors are loving my breads. I've been making multiple loaves every day since I received my 2000B, fine tuning my recipes for this machine. I still haven't used any recipes from the included Recipe Book yet, which is on heavy stock paper wire bound so it can be folded over to the single page you need. Will start using them soon enough. Another plus to this machine is that it doesn't dance all over the counter like my WelBuilt did. Update May 28,2014: Still loving this machine. I really give it a workout as I make 2 one pound loaves daily. I have had to alter the included recipes to make it stop rising too much and hitting the top cover while baking. It might be the King Arthur Flour causing this to happen. I just use less flour and little less yeast. I found that before inserting the paddles, I spray them with cooking spray. The bread releases the paddles easily after baking. This works for both the rigid and collapsible paddles. Update October 7, 2014: Just had a minor problem..... one of the collapsible kneading paddles broke. Just snapped at the hinge. The odd part is that I rarely use that pan, because I prefer the two one pound pans. I'll contact Breadman for the replacement. Still baking like crazy though. I make about six one pound loafs a week. I share with my neighbors all the time.

Great breadmaker, horrible paddles
I've been using bread makers for a very long time. The last one I had was a 2 paddle, horizontal loaf style that I really liked. Unfortunately, it's no longer made and I found this Breadman is the only one that has the same form factor. I saw many reviews commenting on the poor quality control of the paddles, but I thought they would have addressed that issue by now. I was wrong. After just THREE times, one of the paddles snapped right off! Hopefully they'll replace it under warranty, but buyer beware. These are the cheapest paddles I've ever seen. Thankfully there's another set that comes with it that don't collapse, so I can continue to use the machine. Other than that, this is a great machine. I like that they also include 2 single loaf pans. Plenty of options and so far the bread has been great. Update: I called customer service and they promptly shipped me a replacement, no questions asked. I was a bit surprised when I was told it was not a known issue.

Works as expected
It amazes me that many complaints either have nothing to do with the machine, or could easily be resolved by READING the MANUAL. I first bought a Breadman when it first came out back in 1990 or so. I paid about $350 for it. It didn't have all the features, and settings that it has now. It made a 2.5 pound, round loaf. As far as I was concerned the only improvement that could have been made is if they also sliced it. It was still working when I retired it. I wanted a newer one, with rapid cycle, whole wheat and such, which is why I decided to get a new one. that being said, $200 or so for one of these newer updated models is cheap by todays standard. the other thing is expectations. It's a machine. If you want a perfect bread, go to the store and buy it. If you're looking for healthier bread, or just home made fresh bread that's perfect, make it by hand. A bread machine is not going to save you money compared to commercial bread. It will save you time over making it by hand, and it will do a pretty good job, for an unintelligent machine. I've read reviews saying that it only makes a good loaf 60% or so of the time. First off, the machine does not arbitrarily decide to work one day, and not so much the next. If your bread is not coming out consistently the same every time blame the ingredients, or the measurements (also stated in the manual) I've also read some that said, "it died". Maybe, that happens sometimes, mass production is perfect. It could also be the user selected 'Whole Wheat" option. The manual clearly says, That option has a delayed start to allow the wheat to absorb liquid. They didn't say how long (bad documentation there), but a search online says it's 30 minutes. That would be enough to make someone think that it's dead if they didn't wait long enough. I've also read, it doesn't get all the flour mixed, the corners still have flour left in them after kneading. Yep, sometimes that happens. Once again, the manual says, after the first kneading, check, if there's any unmixed flour in the corners, take a spatula and give it a little scrape. The collapsable paddles sometimes get stuck in the bread after it's baked. Yep, manual says they could. the paddles scratch the pan. I haven't seen that yet. I suppose they could. It's a machine - things wear. Also, you can't use the collapsable paddles on the 1 pound loaf pans - as stated in the manual. User could't select 2-1pound loaf option. Yep, manual says to switch between single loaf, and two loaf to press the up and down arrows together and hold for a few seconds to switch modes (they could have made that a little more obvious in the manual.) It makes good bread with little effort from the human operator. Like any minimum wage employee, it requires the occasional oversight. As always, if you want a job done right, do it yourself. and, the manual is your friend - Read it. So far, I haven't had any problems with this unit, and it does at least as good a job as my original one I had for 20 years.

Very nice
I was hesitant in purchasing a bread machine since I have always made bread by hand. I thought I would give it a shot, since I have been unable to make bread because of time constraints. As soon as the Breadman arrived I immediately started with a loaf of white bread. A suggestion here: read the manuel first. You will need to run it thru the bake cycle to burn off any manufacturing oils. It will smoke, but not enough to warrant a fan or open windows. It stops after a minute or so. I didn't do this (because I did not read the instructions) and started a loaf instead. The bread still came out fine. So far I have baked 3 loaves of bread. One regular white loaf, one quick bake white loaf, and one quick sweet bake cinnamon bread loaf. All turned out fantastic. The quick bake options do not allow the bread to get a full rise and they are a little denser than the full time loaves, but still great. (The quick bake feature will mix and bake the bread in 1 hour, the full time bake will mix, proof, and bake in about 3 hours). It does have a delay timer (up to 15 hours), so you can prepare the machine, set the timer and walk away. It will do it's job in the time specified and have fresh bread ready when you want it. I love the fruit and nut dispenser feature. I have not used it yet (well I tried, but it does not work on the quick bake feature - again, read the manuel). The paddles that are supposed to fold down and not bake into the bread, do not really work. Out of 3 loaves so far the paddle only folded down on one side with the first loaf, with the other 2 loaves the paddles baked into the bread. Oh well. Great idea, but it does not always work. The machine did come with a spiral bound book full of at least 100+ different recipes, even gluten free! I was surprised to read that this bread machine will also make preserves/jams. It also came with the 2 1/2lb pan and two 1 lb pans, a measuring cup and a measuring spoon. Overall I am very happy with the Breadman bread maker and I am glad I purchased it.

Final review - Breadman Purchased thru Amazon, LLC
My one over riding fear has been that I would have to use customer service. So rarely do you read about a quick and satisfactory resolution for a service related issue. We shall see how Amazon, LLC & Breadman do. Our Breadman Bread Maker BL2000B was delivered with two sets of the same paddles for the smaller 1 pound containers. The unit should have been delivered with one set for the 2.5 pound container, but these were missing. I will contact Amazon, LLC & Breadman and then write here how this is resolved. UPDATE 10 June 2011: Breadman did not have the proper paddles in stock so we had to reorder from Amazon. This went fast although shipping alone had to make this a profitless transaction for Amazon. So far we have used the bread maker a number of times. It works properly about 70% of the time. Quite often it leaves the dough unmixed and you have wasted your ingredients. I would not have expected a bread maker that costs as much as this one to be this inconsistent. We have had much less costly machines that worked fine every time. I would not recommend this product. UPDATE 14 June 2011: It works about 60% of the time... yet another loaf of dense, heavy, doughy... This was using the long cycle. UPDATE 26 June 2012: I have used my Breadman daily since its purchase a year ago. It has NEVER made the 100% Whole Wheat bread recipe successfully (tried more than 5 times, each time I ended up throwing the ingredients out. It was too heavy to mix & baked bricks; once I woke to a terrible burning smell because the ingredients did not mix properly, had come out of the pan & into the machine, & almost caught fire!) The non stick finish has worn off in places, due to the little round rubber pieces in the two paddles (which are to prevent the paddles from rubbing on the non-stick surface as they turn) disappearing into our loaves of bread. I have tried numerous recipes in the machine's recipe book, all 2 or 2-1/2 lb. recipes. The only ones that have made consistently good bread are the Multi-Seeded White Bread & Basic White Bread. It makes pizza dough very well, as well as gluten free-pizza dough. The gluten-free recipes I have tried have done well but not consistently. When I use the rapid cycle, the bread never rises as big as it does in the regular cycle & is much denser. I always add ingredients in the order listed & always warm my ingredients to the stated temperatures before adding (something I never had to do with my previous machine, an Oster. We got rid of it only because the non-stick surface kept coming off the paddle & after replacing the paddles numerous times, we thought we'd try a different brand.). I still will not/can not recommend this machine.

Not worth the extra money
Purchased this machine in November of 2011. I was willing to spend a extra money on a nice machine because of the high volume of use. While I was never fully satisfied with any of the baked bread recipes- they were all way to dense and didn't 'fit' in the pan as they should- we had great success with the dough only cycle. Worked well for doughs until September of 2012 when my collapsible paddles started to break. Emailed the customer service, the paddles were on backorder, so it took about 2-3 weeks to get new ones. Then, the first week of January I had the new paddles snap in half again. This time I discovered that one of the shafts in the large pan was completely loose, causing it to collapse into the breadmaker during kneading cycles and in turn snapping the paddles in half. Breadman offers no replacement products to buy (as I attempted since I knew I was out of warranty). I decided to call in especially given the fact that this problem originated before my warranty was up. This model is no longer offered by Breadman and they only had the small 1 pound pans available for replacement. So, I was offered to send in the cut off cord, shipping and handling check, and some details and they will replace the unit. While I'm thankful they are replacing the unit, I am disappointed that a machine at this price point would not withstand even a year of use (average 3 loaves a week). I am hoping the replacement they send me is at least fair. Also note that the customer service line at Breadman is also the same line for like 5+ other companies, so it is very difficult to navigate the menus. Overall disappointed with my purchase.

Great product so far.
After using it for two weeks so far so good. Nothing is falling off, nothing broken nor any oil residue, funny smell or excessive noise. This brand as had it's fair chare of problems so hopefully it will perform as described for the long run. If they are still in business they must be doing something right ! The nuts & Fruits dispenser is a great add on although for more moist items like raisins it does need a little help to push them down as they tend to stick. Otherwise all good.
