Good Waffles. Measurements for the mix is off though.
The waffles turned out good. However, I ran into some issues with knowing how much mix to use. The bag says it makes 2 recipes, and each recipe uses 3.5 cups of mix. But when I measured out 3.5 cups of mix, this was far more than half the bag. I even measured twice and when I got the 3.5 cups out, I only had about 2 cups left. So I started out using the 3.5 cups and making one recipe, but the dough turned out very dry; like sugar cookie dough. So I added the rest of the mix and another recipe's worth of liquid ingredients and the dough looked much better. And it made 18 waffles, just like it said it would. So, I'm not sure if I'm just misreading something or if the recipe on the side of the bag has the wrong amount, but 3.5 cups is way too much for 1 recipe.Since I wasn't planning on making 2 recipes worth, I froze some and refrigerated some. I will update with how that turns out.Edit: I warmed up the refrigerated ones in the oven at 300°F for 10 minutes and I warmed the frozen ones in the toaster on medium-bagel setting. Both ways worked well.

Will work with egg substitutes too
I have been wanting to make Liege waffles for a long time, but never was able to find a recipe for gluten free or find the sugar pearls. So, I was very excited to find this product!I read reviews and recommendations before making a batch. I mixed it up the night before and put it in the fridge to rise. I used Ener-G egg replacer and added a 1/4 tsp of dough enhancer per cup of mix. I think the dough enhancer made the dough a little too dry. I will probably use less next time. The next day, I forgot to take it out of the fridge when I woke up, so the dough was cold and stiff when I started. So, I just cut off about a 1/2" thick slice. Worked nice to sit in my square waffle iron. I have an All-Clad waffle iron and put it on setting 6. The waffles were perfectly cooked through. The dough was a bit dense, but it was not chewy or gummy. Not all of the sugar melted. But, those on the outside were perfect. All of the waffles came out without sticking, although a few did fall apart. The waffles have amazing flavor and not even sure it was necessary to put butter on them. Plain is perfect. Now with all that sugar, the inside of the waffle iron was a mess. I wasn't quite sure how to clean it up. But, decided to just pour in some water and let the hot waffle iron boil off the mess. I closed the lid so the top could steam off. After a bit, I poured out the water and then ran a brush around the ridges. A quick rinse and my waffle iron was perfectly clean. My recommendation, if you are going to try making gluten free waffles - which are generally better than ones made with regular flour, you MUST have a high quality waffle iron. You need one that will get sufficiently and evenly hot to have these cook up properly. When my 1950s cast iron one failed, I tried and returned many until I found the All-Clad one. It is worth every penny. My only dislike is that it has a non-stick coating.

Wonderful taste, eat quickly!
This tasted great and was exactly like the gluten version when first out of the waffle iron. But, they soon become stiff and crumbly. It’s gluten free baking, so this happens. For gluten free this is amazing, but it just doesn’t have the protein needed to keep it soft and luscious when cooled down and kept for over a few hours.I’ll definitely buy it again. Just don’t expect the texture of the original gluten filled recipe.

THE best gluten free waffle mix I've tried!
THE best gluten free waffle mix I've tried! It takes time, being Belgian yeast waffles, but very worth the time, effort and money. My family isn't gluten free as I am, but they love these as well and request for me to make them. I've already purchased twice and WILL be purchasing again!

Leave time for dough to rise :)
These waffles were so delicious! We added blueberries and bananas to our mix. Make sure you wake up early to make them so you can give time for dough to rise.

Didn't realize it was gluten free
Overlooked the fact that it was gluten free, could not return so I tried it. Not impressed, actually did not eat finished product--just tasted and was disappointed that it was not like the delicious waffles at a local casino. I will keep trying. They actually provide the from scratch recipe on the pearl sugar package.

Easy liege waffles at home
This waffle mix really changed my point of view on premixed waffle/pancake mixes. The waffles came out looking like the real deal and delicious. I've had my first real liege waffle in Brussels in 2018 and it was delicious. I think the waffle mix waffles came out looking even better than the waffle I had in Brussels. At least the color looks a lot better than the one I had in Brussels. The instructions mentioned to prepare the batter and let it rest for 2-3 hours but I prepared the batter at night and let it rest overnight in the fridge. The dough risen nicely in the fridge. I folded the pearl sugar in the batter the following morning and divided the dough into 9 portions. I just let my waffle iron do its thing and the waffles came out looking nice and golden brown. The dough can get a little messy so use food gloves. The reason I took a star off is the sweetness of these waffles. They are already sweet enough and with the pearl sugar folded in, it became almost a bit too sweet. The pearl sugar didn't really melt in the cooking process so I still had big pieces of sugar in my waffles. I only used half the mix for the 9 waffles I made. Next time I will make the pearl sugar smaller so it melts faster and add less to the batter. Please make a low sugar version!
