Very Impressed! *by A***E on Reviewed in the United States on November 13, 2017* So far I've tried the Adzuki spaghetti and the Edamame/Mung Bean Fettuccine. The spaghetti was surprisingly good, and held up well (other pastas in this vein of non-wheat/egg sometimes break down if you don't cook them *exactly* right), even on reheating the next day for a lunch at work. So far, I like the fettuccine over the adzuki, due to the "mouth feel" of it -- it's closer to traditional pasta: hardy, a bit chewy, and has it's own place on the plate (the adzuki pasta kind of melted into the background; didn't add much to the meal ... but was still a good addition over nothing at all).== Pros + Cons ==Adzuki Spaghetti(P) Very neutral flavor. If trying to transition your family to a non-wheat option for pasta, this one seems to hold up pretty well (it turns out to be more of an angel hair version of pasta vs. traditional round spaghetti noodles).(P) Held up surprisingly well when cooking, as well as reheating the next day.(C) Not much texture once cooked; does well to emulate pasta, but compared to the Mung/Edamame, it does not hold up.Mung Bean + Edamame Fettuccine(P) Great texture and density - eating it was, to me, very much like "traditional" wheat pasta.(P) I'm not Italian, so can't judge it on that level, but I believe it had a bit of a "crunch" to it when cooked al dente, and really held its own on the plate with chicken + sauce.(P) Neutral flavor, but does seem to have a little more than the adzuki spaghetti.(C*) Not the same as traditional fettuccine noodles (at least, those that I'm used to) -- not as wide or thick (however, non-wheat items tend to be this way, when you get right down to it).*I actually see this as a plus, because I was not a fan of fettuccine noodles prior, due to them being wide and heavy; I can see myself using these in Alfredo as well as Swedish Meatball recipes.== Items to Note ==Come sealed in plastic bag within a cardboard box. If you don't use all of the pasta in one sitting, and don't eat pasta very often, you may need to reseal in another bag or container.The noodles aren't super long (about 7-7.25"). You won't get the "Lady and the Tramp" slurp-able pasta you may be used to! I don't eat flour or gluten so pretty much all the rice & wheat pasta is off limits but so is those magic noodles. I'm going to try kelp needles next which are counted as a veggie. These on the other hand are counted as a protein. All that's in it are beans. I made the black bean one with mushrooms, carrots, cabbage, spike seasoning, flax oil & a dressing/sauce made with chickpea miso, tahini, garlic, ginger, lemon & salt. It was a hit with company. The box fed 4 hungry people. I also had a small side salad of beets & fennel with balsamic, salt & flax oil. With homemade kombucha over ice... nourishing meal. Looking forward to cooking the adzuki bean spaghetti & the mung fettuccini! I will then buy the pack of pasta from this same company made from red lentils, green lentils & chick peas. The texture is slightly stiff, but still good. The flavor is worlds better than grain pasta. Beans just taste more hearty than grains in my opinion. So full of fiber & protein & nutrients! I'm glad to have discovered these because I really don't do much pasta since going gluten free & flour free. It's tough to find pasta that works besides spaghetti squash, spiralized zucchini & other veggies, kelp noodles & these from explore cuisine. If you're serious about your health & eating for healing ... this is a nice option. Somebody told me everything I put into my body is either healing me or killing me so I just try to make it consistently healing!!! It tastes better & is an expression of love to my body, the planet & those I love. We went through probably 10 pounds of it in 6 months. I was crushed when Costco stopped selling it. Thankful Amazon has it. It cost a lot more than it did at Costco if that's what I have to do. Can't live without it!It's a wonderful noodle. Very healthy. And there's no horrible carbs coma after eating it!!!I tried one of the other 2 flavors. Can't see the names right now. Think it's mung bean. It taste good but didn't sit well in my tummy. I'll finish the box but probably won't buy more of this noodle.
