It doesn't have much flavor at all compared to the cassia cinnamon. I find myself using much more of this kind in an attempt to get more flavor. I have read that this is the true cinnamon that gives you health benefits. I just recently learned about this difference so wanted to try it, mostly because of the health benefits. I even read that you should not eat too much of the cassia cinnamon because it could cause liver damage if you do. I also noticed that this cinnamon has a different more fibrous texture.
