Exceptional Customer Service!
UPDATE : As you can read from my original review below, my experience of my original purchase was less than expected and left me somewhat disappointed, and on the fence of continuing to purchase the Dalstrong collection. However, after posting my original review, I was contacted by Nancy from customer service. I could tell that Nancy (Dalstrong) genuinely cares, and expect nothing but the best quality for their customers. Unexpected to me, I was offered a replacement knife sent to me free of charge. I have to say that the replacement knife was nothing short of perfect, and I couldn't be more satisfied with not just the product, but the customer service as well. I have since purchased my next knife in the collection, and I was blown away by the quality and craftsmanship for the price. I am now a proud Dalstrong customer for life without hesitation, and will definitely be purchasing more in the future!!I don't write reviews to often, but I have to do so for this. I was excited to receive this Dalstrong knife after purchasing, and it came packaged beautifully. Upon opening the box, and actually holding it, I was not disappointed one bit. But as soon as I checked the blade, I realized it was quite dull, I wasn't expecting that. I do have several different honing rods, so I knew it wouldn't be much of an issue to get an edge. But when trying to steel it, I could tell something didn't feel right, so I took a closer look and realized there wasn't a constant edge down the length of the blade, very weird, and that I would probably need to use my whetstone. Even though I have done it more times than I can remember, and they come out great, I decided to just wait and pay a professional knife service to put a nice edge on it, since it's a quality knife that I paid a decent price for and don't want to take the chance of messing up the looks of the blade in any way. The downside is that I had just bought a few different primal cuts of beef the same day the knife was delivered, and couldn't wait to use it. But, unfortunately it wasn't the Dalstrong knife that I used to cut all that beef, I used my twenty dollar knife, that I keep very sharp, as I do all my cutting knives, just to prove to my family that just because you spend more and it looks great, doesn't always make it better. Honestly, I did buy the Dalstrong mostly for looks, but I would also like to use it too, a dull knife is just a showpiece. I have been a butcher for almost thirty years and I own many knives that I use for work and at home, so I figured I would try the Dalstrong line of knives. Although I am very disappointed in the quality of the knife that I received, I have to believe it was just an oversight mistake that doesn't happen to often, at least not according to the all of the positive reviews, and I just got a bad one. I'm not sure if I will continue on with Dalstrong or not, but if you purchase one and it's ready to use out of the box, it is of excellent quality, and the looks of the different series available, are phenomenal...... I just wish mine was.

amazing knife
absolutely love this knife so far,Use to slice up and trim full rib roasts and pork bellys.lighter then I thought it would be but came razor sharp, has been holding a great edge and pushes through meat like butter. Very intimidating first couple uses.Grip is amazing on this and the Chef knife version.My only gripe, the black coating starts to show some wear from slicing, no scratches just wearing from black to dark grey. Definitely worth the money and love the case!

Amazing what a really sharp knife can do
Most knives that people use haggle the meat instead of cutting/slicing it. This is a really sharp knife, just as the manufacturer describes them. I used this to cut up roast chicken and turkey at holiday time. The meat just slid right off the breasts, the thighs and drumsticks almost fell apart at the look of it.The one thing to be careful of is that this is so sharp that small bits of rib bone might come off with that last slice.

This knife is super sharp and balanced very well. The handle is similar to a global but a bit thicker.

Would love to see one small change
Lovely, razor sharp knife that is being added to my daily work kit (6 year meat dept worker, aspiring meat cutter). The overall handling is great, and it’s light enough that 8 hours of cutting isn’t tiring, but I do have one small grip. There is nothing stopping your hand from slipping off the handle, and since it goes right from sleak, beautiful handle into razor sharp edge, I have nicked myself once or twice. To combat this I cut a small piece of the included sheath, and glued it to the handle to act as a cross guard more or less. I would love to see something like this added to the series!

Got this for work
I work as a meat manager at a box grocery store. I used this the first time I opened and cut for the day. The cuts were fast and smooth. Even with extra cut and cuting a whole chicken it's still sharp.However, the blade cover is a bad design or I'm using it wrong. It slips down and the tip shows. Even in the roll bag I have.
