Is this the same as a boning knife? Need to trim fat from a brisket

I have used filet knives for deboning pork shoulders and trimming fat from briskets, but this isn't a boning knife. Victorinox makes boning knives, as do other manufacturers.. I would suggest you get a 6 inch flexible blade boning knife for this.. just type in the Amazon search box for Boning Knives.. you should get a buttload of hits.

What country is this knife made in?

I believe Finland but could be wrong. At least that is the country of origin. Regardless, I own several Rapala filet knives and they are one of the best blades you can get.

What is the best blade length to fillet fish?

I personally like 6 inches to 8 for fish shorter than 3 feet. 10 or more might be good for fish like a tuna or marlin.

How do you sharpen the knife? Is there a specific way?

Main thing is to get a good sharpener, since as sharp knife has a precise angle in the blade I recommend a sharpener not a stone! too hard to control at least for beginners. So get a sharpener that has a" V" looking groove which you run over the blade, the "V" may be made of ceramic or hardened tungsten carbide. Great Knife!
