How well do these pieces stick to a standard felt board? They seem smoother than many sets I’ve seen, which makes me worry they might fall off...?

They stick well .. make sure you lay the entire piece flat on the flannel board.

How large are the pieces?

They are pretty large, depending on the animal anywhere from 5-6 inches long and 4-5 inches high. I actually need two average sized felt boards to tell the story. They would be great for a classroom setting, especially if there was access to a large feltboard on an easel.
