What can you do if the strap toggle isn’t going through the steel stud?

You need to hog out the hole with the drill. You must have a burr holding it up.

Can this hold a 75 inch TV, weight about 80lbs + a fixed bracket?

Its more about the weight and making sure the toggles are centered on the steel studs. I do believe that the specs indicate that it will hold that weight.

Can I use these as drywall anchors.

Hello, The snaptoggle anchors in this kit are for steel studs only, they are not meant to be used on drywall-only applications. Kathryn @ECHOGEAR

Can it hold a 65 inch tv?

Probably. If installed correctly it should, I have a newer (2018) 55" and it holds it just fine. If you have an older (heavier) 65" it may be...interesting.
