Q: What steel is this knife made with and is there a version without the sawback?

Blade: Spring steel HRC ~ 55, electrophoretic coating. Without sawback on the blade is model FM 78. With sawback on the blade is model FM 81.

Q: What is the blade angle?

I'm thinking more likely 25 degrees, and that is what I sharpened it to. It is not the hardest steel, but made TOUGH (to not break) for hard tasks. A higher angle is best for rough tasks and not-so-hard steel.
