Amazing
These are so delicious and full of goodness, not calories! They need good rinsing, then to be marinated in lemon juice and baking soda for 5 minutes, then rinsed again and the texture is perfect! Excellent source of iodine especially for vegans. Very versatile! Highly recommended.

Love these noodles!
I am diabetic & love noodles, but they don’t love me back, until now.These noodles are best when warmed with whatever you are serving them in, whether a stir fry, or Thai food or soup. They taste just like regular noodles & look like glass noodles. They are awesome!

A satisfying noodle replacement
These make a nice alternative for the more carb-laden noodle varieties that often go into Asian recipes. I enjoy ramen noodles, but since shifting to very-low-carb eating, I've given them up. Sure, I tried the konjac noodles, which ran roughshod over my innards every time I ate them. I've tried spiralized veggie noodles (which are tasty in their own right) but those fail to approximate the texture and neutral flavor of classic flour-based noodles. However, these kelp noodles really work for me.And a tip I found online to get the right texture from these noodles: in a large plastic bowl, mix the juice of one lemon with 1 tsp. of baking soda (it will bubble up so just stir until it stops); drain the noodle package in a sink then add the noodles to the mixture in the bowl; toss the noodles with the mixture until every strand has gone soft and limp (about 90 seconds); finally, drain and rinse the noodles with plain water and add them to the recipe you're making. Of course, you can soften the noodles using lemon water over 30 minutes, but these instructions should produce soft noodles in less than five minutes (without cooking).I had a bowl of "ramen" this afternoon, and it was nice to savor those flavors and textures again. I highly recommend this item and I'll be stocking up again myself.Note: I've not tried this as a replacement for spaghetti, so I can't speak to its suitability in Italian dishes. Somehow, I don't imagine these noodles working in that capacity, but I wouldn't discourage anyone from trying it once.

Great in salads
This product is a bit pricey but they are worth the occasional splurge in my opinion. I use these in an edamame salad with miso and sesame.

They are so good!
So the trick is to soak them in baking soda, lemon juice and water for at least 5 minutes (the longer the better) then rinse well. They will melt in your mouth! So good! They take on any flavor! Must try! I’m ordering more! Way better than miracle noodles.
