Does this work to cover ears for large heads?

Yes it does. I think I have a pretty large head and it does cover my ears. I didn't know it had a stitched hem, I was hoping to wear it like a beanie cap (roomier).

Is one side of the flap part supposed to be sown so that you cannot wear it all the way pulled down?

Yes, one side is sewn to hold the shape of the cap but all you have to do is snip through the sewn part and then you can shape the cap anyway you wish to wear it. It is great for coming out of the pool with wet hair in the winter. Very well-made. I love it!
