Ciao Bella! KitchenAid's Pasta Roller & Cutter: A Culinary Symphony in the Key of Spaghetti
Ah, pasta – the culinary equivalent of a warm hug from Nonna, a symphony of flavors that transports you to the cobblestone streets of Rome with every twirl of the fork. And what better way to channel your inner Italian chef than with KitchenAid's Pasta Roller & Cutter attachment? This masterpiece of kitchen engineering is like having a pasta-making Nonna in your very own kitchen – complete with a few quirks and plenty of love.Let's start with the basics, shall we? This attachment is like the Ferrari of pasta makers – sleek, stylish, and built to last. Made from heavy-duty materials that could withstand a Vespa rally through the streets of Napoli, it's as durable as it is dependable. Plus, the rollers and cutters work like a dream, effortlessly transforming a lump of dough into a symphony of spaghetti, fettuccine, or whatever pasta shape your heart desires. But beware, my fellow pasta aficionados, for even the mightiest of pasta attachments have their quirks. The cleaning process is like a culinary obstacle course, with nooks and crannies that are harder to navigate than a Venetian canal during high tide. It's enough to make you question whether the joy of homemade pasta is worth the hassle of scrubbing dough remnants from every crevice – but fear not, brave chefs, for the end result is always worth the effort. Now, let's talk about the real magic of this pasta attachment – the endless possibilities it brings to your kitchen. From classic spaghetti and meatballs to decadent fettuccine Alfredo, the only limit is your imagination (and perhaps your waistline). And let's not forget the satisfaction that comes from knowing you've created something truly special – a labor of love that's as comforting as a bowl of Nonna's homemade minestrone. In conclusion, KitchenAid's Pasta Roller & Cutter attachment is a must-have for any pasta lover's kitchen. With its heavy-duty construction, flawless performance, and Italian-inspired charm, it's like a culinary love letter to the art of pasta making. So grab your apron, dust off your rolling pin, and prepare to embark on a gastronomic journey that's as delightful as a gondola ride through the canals of Venice – because when it comes to homemade pasta, the only limit is your appetite!Pros:Heavy-duty construction ensures durability and longevityRollers and cutters work flawlessly to create perfect pasta every timeEndless pasta-making possibilities bring Italian-inspired joy to your kitchenCons:Cleaning process can be a bit challenging, requiring extra effort and attention to detail

Don't get your fingers caught in them...
My husband originally purchased this for me for Christmas through a local retailer - but we think we got someone else's used product because it had dried pasta crumbs in it AND the rods on the bottom side of the flat roller was tarnished. So we took the item back to trade it for another one, and the other one's rods were nicked up - they should be smooth. So we just got a refund then I took a chance and ordered a replacement here on Amazon - wish he'd have just purchased it thru Amazon in the first place! The pasta rollers arrived in beautiful condition!I have never used one of these before, so learning was pretty easy - I just watched a few videos on youtube after reading the instructions. Watching others demonstrate the product was very helpful, and my first batch came out perfect - although I used a vegan recipe and the noodles came out slimey. So the next time around I used the egg recipe but not the one recommended because it is a pain in the hind-parts to decipher - and if you purchase this, you'll see what I'm talking about. It's the recipe that kitchenaid put in their booklet. So I found a very similar recipe at allrecipes - same exact ingredients but measured slightly differently - and viola! Egg noodles and happy husband! (Because this thing is expensive and so he was hoping to get his money's worth. LOL!)There are so many positives to making your own pasta at home, and this thing makes it so easy that it's almost a sin. I almost feel guilty for not rolling the pasta out with a rolling pin and using a knife to cut the noodles the way my mother and grandmother did. LOL!Anyway, I make tons of pasta and what I don't cook up fresh, I dry on a parchment lined cookie sheet in my oven at about 170 degrees F for a total of about 30 minutes or so - After 20 minutes I turn them and give them 10 or so more minutes - depending on thickness. Then I put them in a ziplock bag and store them in my freezer. I have read that they will stay good on the shelf for a while, but since they contain egg, I don't want to take the chance. So anyway, I love this thing! It's easy to use!Only problem is that you need a little patience to clean up - I tend to brush the crumbs off right away and wipe it down real good and really work on getting flour out of the crevices - I use the brush they provide and a toothpick for detailing, but you really need to let these air-dry for a couple of hours first, and I like to clean things up and put them away right away or else I get distracted and forget about them. So this is the only thing that I don't like, but really that's a personal problem. So buy this and enjoy the heck out of it. You won't be sorry!

Easy for use! I love it
I love this product. I make my own pasta at home now, including lasagna. I no longer need to buy store-bought pasta full of additives. Now I can make my own pasta naturally at home.Very easy to use, extremely strong, and durable. I’ve used it several times and have never had any problems. Just one tip: if you are going to run it at a faster speed, be careful not to leave too little flour around the dough. Otherwise, the dough may stick or get caught while passing through.Versatility, several thickness

Why did I wait so long to buy this???
I have owned my Kitchenaid stand mixer for over 30 years and always wanted the pasta attachment. I actually owned a stand alone extruder style electric pasta maker but it was a pain to use and to clean. The Kitchenaid order arrived quickly (yay Amazon Prime!!) and I couldn't wait to try it out. I followed the instructions included with the attachment exactly to make my first batch of pasta using the recipe in the manual. It was unbelievably easy to both roll the pasta sheets and to cut the sheets. I made both spaghetti and fettucine. I also purchased the Kitchenaid pasta drying rack which I used to hang my pasta while I cut more pasta. For this first trial I really wanted to make a dish that showcased the actual pasta, so I made a simple "sauce" of olive oil, parsley, basil, mint, thyme, pepper, and crushed red pepper. I blanched some sugar snap peas to toss with the al dente cooked pasta and herb mixture. I then topped it all with some freshly grated parmesan. The pasta was absolutely delicious. There just is no comparison with the store bought dried or fresh pasta. Clean up was a breeze. I simply allowed the rolling and cutting attachments to sit for about an hour and then brushed off the crumbs of pasta and flour, wiped with a soft dry towel and packed it all up for the next use. The actual attachments are very heavy steel. They appear to be well made. Attaching everything to my Kitchenaid was a snap once I was finally able to remove the attachment screw. I'm going to check to see if Kitchenaid sells some sort of knob to place over the screw to make it easier to tighten and loosen. That was actually the hardest part of the entire experience. I ended up using pliers over a towel to loosen the screw. Today, I am making a lemon pasta and can't wait to see how it turns out. If you are a serious pasta lover and have a Kitchenaid, don't make the mistake I made by waiting 30 years to get this attachment. I absolutely love it!

the machinery is great so far!
I can only speak to my personal experience with these machines. Maybe this will be helpful to someone wondering what they are getting themselves into before they buy.the fit and finish of these pasta machines is very impressive to me. for the price I think people should expect a certain level of quality but the way things are made today, a higher price or a name brand doesn't always mean quality like it used to. I was in the market for machines to fit my new mixer and I saw these were on offer for a deal. I am glad I did. full price for these would be putting me to other options that are readily available. even the sale price was a bit higher than the others, but I went ahead and bought the name.as far as use goes, I am a learner at pasta. I am not that good *yet* but I am getting the hang of it. I have not used the spaghetti attachment yet, only the fettucini and the roller. I need to do similar pastas as I experiment until I find the dough formula that gives the best flavor and texture. I have made some pretty good noodles but I still have a few issues and part of those issues are machine related.the roller is fine. no issues. no problem with clean up. no problems at all. pat out the dough. flour it. roll it. flour it. roll it again. flour it. keep going until you get the sheet size you need. right? perfect. no sticking at all.CUTTING on the other hand, is where I am having problems. I don't think its a machine issue as much as I don't know how well enough yet and the learning curve is pretty steep. no matter how great the dough feels, the sheets feel, the amount of flour I keep them dusted with... the noodles will inevitably stick and bunch up making a clump that i need to manipulate and pull to get them to go through. I am certain that I am doing it wrong. even watching several youtube videos of other people doing it... it very well COULD be the machine but I am inclined to blame myself first. I just had a pasta rack delivered in hopes that I roll out the sheets and hang them up to let them dry a bit before trying to cut. if it doesn't work I'll need to try something else. its frustrating to need to start over and re sheet the dough then cut it again. lol especially when every one else can tap it with a magic wand and make the sparkles go, then present perfect pasta.along with this issue, I believe that I have a bit of dry pasta inside the cutter machine that rattles around when I shake it. I am not sure how to get it out. when I search "cleaning" I get "repair" videos that show disassembly and that's not what I want unless that's the only way. I dont want to get into a can of worms with either disassembly or a warranty claim because I cant make my pasta not stick to the rolling cutters. : /I'm going to win this thing. I just need practice. Maybe if you read what I am going through, you can have a similar experience and know that you are not alone in this thing. I'm in this well over 600 bucks because <redacted> virus distancing and honestly, its better to make fresh food out of real ingredients than buying premade processed everything. Its good to know things and I plan to come out on the other side of this with a ton of new skills.

Good Quality
I love this attachment. It is wonderful quality and I use it all the time. It helps do the most time consuming part of making pasta. The only downside I would say is you can’t really clean it. But overall it is good quality and I would recommend!

Really happy with the pasta maker. After our visit to Italy and a cooking cooking class we were ready to try making pasta. We were very happy with how the equipment worked and the results were a great meal.

Authentic, high quality KitchenAid set. Works perfectly as described.
This KitchenAid attachment set is the real deal with authentic quality finishing. They work very well with our tilt mixer. The fit to the mixer is perfect. This is important as some knock-offs don't fit well to the mixer and may cause damage to parts. The pasta roller does its work effortlessly and gives the perfect sheet of the desired thickness. The cutter is sharp and gives very even and clean cut strings of pasta that don't stick together. Lastly, can't say enough about the quality of the set. So glad to have paid slightly more for a quality set that really works instead of settling for less expensive versions.

Absolutely Worth the Investment for Pasta Lovers
As with everything made by KitchenAid, this attachment set is absolutely worth it. You can tell there was real care put into the manufacturing and design. The pieces are made of strong, sturdy metal and function smoothly without any hiccups.Attaching and removing them from my stand mixer is quick and effortless, and once they’re in place, they work flawlessly. The rollers create perfect sheets of pasta, and the cutters make clean, even noodles every time. It’s so much easier than using a hand-cranked machine or struggling with a rolling pin.The box even includes a handy cleaning brush to help keep everything free of flour and dough after each use!Yes, the price is a bit higher than some off-brand versions, but in my experience, the premium is absolutely justified. The native compatibility with my KitchenAid mixer and the undeniable quality make this set a fantastic long-term investment for anyone who enjoys making fresh pasta at home.
