Is there a cap at the tip of the threaded clamp to brace/stabilize, or is it a sharp tip that's meant to screw into the surface it's attached to?

I just unscrewed the clamp screw and the screw is flat like the end of a mini bolt. No cover on the tip. Can't recall all of the accessories it came with as I have mine screwed to the underside of my desk using the hole on the horizontal surface of the mount, so not using the clamp. Hope this helps.

Can you unscrew the bottom of the tray and remove the clamp arms?

Yes, There are 4 screws. You can remove the clamp arms.
