What is the scale; can these be used with 1/6 scale action figures or Barbie sized dolls?

NO!!!!! I bought one depending on the "Yes :-)" answer above, and the set comes up to a 1/6 scale figure's knees. It should be good for a 1/12 scale, 6" figure.

Is this a hand puppet size?

That is a justifiable description. It is to scale in the photo, where the finger tips will cover over 50% of the drum head. Your puppet may need something sturdy like the end of a chopstick to drum effectively, though.

When I hit the “f” button it just plays a demo. How do you make it enter freestyle mode?

Hit the button next to it. Per the photos on the listing and trial and error, you should be able to figure out which button does what.
