Q: what material are they made of?

Appears to be the same as kitchen trash bags. Fairly heavy walled. Work well.

Q: How wide are the 5lb bags? I want to use them for my meat rabbits, but judging from the video they look very narrow.

They will fit around a 3 7/8 inch tube.

Q: Could these be used for vegetables as well (i.e. corn cut off the cob or green beans)

I believe these bags would work great for this. They are 2 mils thick which is quite thick for this small size bag. We have used several cases of these bags and have not had a single bag tear or fail for us.
