This is a fine machine. It works well for French fries and ratatouille which is what I primarily use it for. It seems well made and I expect it to last awhile. The blades are sharp but I do have to put in a little muscle when slicing potatoes.The only thing I'm not a fan of is the amount of waste it creates. The safety guard has prongs on the underside which you pierce your vegetable with and also has a button of sorts that adjusts how deep those prongs go into the guard. As you slice, you push the button to move the food further down the guard. The trouble comes when you get down to the end. You have to stop when there is 1-2 inches of vegetable left on the guard. If I try to push it beyond that, the food dislodges from the safety guard and will get stuck about half way through the slice. This causes me to have to VERY CAREFULLY either cut the piece away with a knife or risk injuring myself trying to push it the rest of the way with my fingers. I've given up trying to be less wasteful with this product at the risk of injuring myself and just stop when there is about 2 inches of vegetable left. This is my first mandoline slicer so maybe this is a problem with most devices like this.It comes with different blades for different thicknesses and with blades for julienne style slices. The larger julienne slicer is great for McDonald size French fries.

Good product, but have concerns about shipping and unpacking issues
I have not had an opportunity to use this product yet, but I do have a few concerns that may be of interest to Buyers . I've given this product five stars because it does look like a very quality product that I will enjoy using. I bought it to slice plantains and think it will do a good job. After receiving this slicer, I sent the following information to the seller. He responded by saying he was aware of these issues and hoped to have them fixed by their next shipment.1. On page 4 of the instruction booklet under the description of the items lists under "A.", it states: "NOTE, Mandoline comes assembled with 1.5mm Slicing Plate in place." My slicer came with the grater blade installed, which I finally figured out after I went through all the other blades. The blade shown in the manual is incorrect and is confusing to Buyers when we are trying to be very careful about how to handle this sharp product.2. The instructions on page 4 under "B." state: "To remove the l.5mm Slicing Plate, simply press the red button and slide the plate back towards the handle." Since the grater blade does not have a red-button-hole, this instruction makes no sense to the new Buyer.3. On page 6 of the manual under B., the manual states: "Once the Blade Cover is installed, slide the 1.5mm slicing plate back onto the Mandoline during storage." Since mine came with the grater blade installed, I don't know if I should put the grater blade back on or if I should use the 1.5mm blade.4. This arrived in it's original box with no outside packing material to conceal what was in the box. Although it was not damaged in any way, my concern is that it did not have any tape on the flaps on the top or bottom of the box to seal it closed, which means anyone could have opened and closed it without anyone's knowledge. I believe this is a safety issue, as well as a concern to Buyers that the product is easily available for anyone to use or tamper with before it reaches its final destination.5. Since this product arrived with a different blade installed than was described and pictured in the manual and since the box was not sealed closed in any way to prevent opening or tampering during shipment, I have every reason to believe this slicer could have been tampered with prior to delivery to me. If it wasn't, then your instruction manual is incorrect and needs to be corrected. This slicer is very sharp; therefore, extra caution should be used when describing how to un-pack and use it. Shipping it in its original box that describes its contents is okay, but it must "sealed with shipping tape" on the top and bottom flaps to insure it cannot be tampered with without being noticed.

I LOVE this Mandolin! It is very sturdy and believe it when you see anywhere that the blades are sharp! If you have a cut proof glove, USE it!It is exactly what I was looking for. I've had others but they were too flexible when you put any pressure on it while slicing or they moved around the counter. This one stays put and doesn't bounce up and down while using it. And the blades are sharp enough that you really don't have to put a lot of pressure on it.I had to experiment a bit with the different blades because I am not familiar with the mm sizing of the blades. The marking of the mm are not ideal and I put different tags on the ends to easily see the size.The first time I used it, for some reason I felt the need to try to get one more slice out of that last little nib of potato, and pushed it over the blade with my thumb, and sure enough I was too slow in removing my thumb and cut it as well as that last little piece of potato! Then I wasn't paying attention while putting the blade guard back on and sliced the tip of my fingernail off! By the way, it would probably give you a good manicure if you needed your nails trimmed! LOLSeriously, just be careful. If you have a glove use it! I was just too lazy to get mine out and "assumed" I was smart enough to keep my fingers out of the way of the blades....guess not.I would definitely recommend this product.

This is my first so I have nothing to compare it to. We were a bit disappointed on the first day bc it doesn't cut through sweet potatoes and large carrots as easily as we thought it would. Don't get me wrong - the blade is very sharp, but you really need momentum to get nice even cuts w the larger/firmer veggies. Can't stress enough how important it is to use the holder to protect your fingers.The 'bonus blade' - weird bc it's a dif design than the others, so it covers the red release button.Rinse it right after you're done using it bc scrubbing near/around that blade isn't worth the risk of a cut. Rinse before veggies dry and it's easy-peasy to clean.
