Q: Does the interior have extra organizing pockets?

Single Main compartment with no organization.. the zipper pocket has a small mesh organizer. Works great goes around the world with me on the regular. Almost as good as the 2014 ozark trail version.

Q: what are the dimensions?

Unpacked and laid flat it's about 14" wide and 28" long. Once it's packed and the top is rolled it's about 22" inches tall.

A helmet should fit but It's really going to depend on the specific helmet. Trial and error may be the only way to go with that.
