Excellent value slicer
I bought this for my Christmas prime rib roast. I prefer English cut roast beef, so I make thin slices. This was better than my parents’ electric carving knife that they’ve historically used. Even slices just came off the roast. It had a little trouble getting through the seared crust of the roast - by trouble I mean that the knife’s own weight would not cut through the crust so I had to actually pushed, but after just moving the knife back and forth was enough. Comes extremely sharp and I recommend getting some sort of sleeve for it. I also have a 14” honing steel which when gently used for the second roast seemed to keep it at brand new sharpness. Regarding ergonomics, the big goofy plastic handle is wonderful. It doesn’t slip and it’s comfortable in my hands. I’m very pleased with this knife for slicing beef roasts, which is the specific purpose I bought it for. I’ve not used it for anything else. So if you want a roast beef knife, this one is sharp, has help up through a few dinners, is still razor sharp, and it’s like the cheapest in class. I recommend it.

Love this slicer, great for meat!
I alsolutely love this slicer! As with all Mercer products I've bought, it is a quality knife at exceptional value. The handle is very comfortable and feels solidly attached. Their steel always strikes a good balance imo, it comes sharp, and it holds a sharp edge, but if you're good with your crock sticks or stones you can get it much sharper and it takes an edge fairly easily. I love the design of this specific knife for slicing meat. The blade is long, narrow, and thin, making it great for slicing up any large cut of meat, like tri tip, turkey breast, or pork belly, and I use it to cut up ribs, too. It'll slice through very tender ribs with no effort and without removing the meat, and the narrow design makes it easy to follow the curve of the rib bone. I've tried a lot of knives over the years, both less and much more expensive, and most of the ones I've kept are Mercer. There's a reason they're still a big name in the culinary school and foodservice industry- excellent knives that are sharp, easy to clean, and comfortable at a great value! Even if you don't buy this one check them out!

EXCELLENT !! Pleasantly Surprised
The Mercer Slicer is a great knife for the money ($20.00). Comparing it to my more expensive Victorinox Slicer ($50.00), it compares as follows: 1. They both come RAZOR SHARP, from the factory. 2. They both have stamped blades. (Stamped blades are lighter and easier to use, than forged.) 3. The Mercer blade is slightly thicker (stiffer) than the Victorinox . 4. The Mercer is a more utilitarian knife than the more elegant Victorinox or Henkel. 5. Has a plastic handle. (Opposed to wood on the Victorinox.) 6. The blade hardness is 56 Rockwell C. Which is the hardness most high $$$ knives are heat treated to. 7. They both carve a Prime Rib Roast, equally, efficiently. 8. Neither knife is dishwasher recommended. If you want a great utilitarian knife, for everyday use, the Mercer will do the job. If, however, you want an expensive knife to impress your dinner guests, buy a Henkel, a Wusthof, or a Victorinox. My only criticism? I wish it came with a edge protection sheath. It's super sharp. Be careful storing it.

quality and price cant be beat
For the price , this is a great purchase . It is sharp , cuts well and is ergonomic . My one major complaint is that I wish I realized this didn't come with a protective cover of any type . It is a very sharp and large knife making it difficult to store . I would gladly have paid more for it if it came with some sort of storage box, sheath or cover . With hindsight I would spend more on another brand that came with protection . This would be 5 stars then .

Excellent Value
Mercer knives are excellent quality at a good price. I replaced my expensive, brand name knives with these. The slicing knife is thin, has just enough give, and is extremely sharp. Sliced my roast beautifully.

Very sharp, very durable, ergonomic and priced well for the quality and feel.
Started curing and smoking pork belly to make bacon. I have a meat slicer but needed either a bigger one to slice long pieces of bacon or this knife. This thing is a monster and devastatingly sharp. I am looking forward to making my next brisket as I now have a knife that will cut through a whole packer without issue. It has a little spring to it but stays straight enough that every slice of bacon came out perfect. You could spend a LOT more on a similar knife but I don't see any reason why you would need to. The grip has a great feel and shape as well as aggressive texture. I have some other Mercer knives and have never been disappointed in any of them.
