This Sencha green tea is grown using the Kabuse-cha method of shading or covering the tea leaves prior to picking them. The tea growers also use the Chagusaba method, a farming method dating back to the 17th century that originated in Shizuoka Prefecture near Mt. Fuji, in which farmers grow native grasses for use in mulching between tea bushes, increasing the soil's sustainability. For this Sencha, sugarcane was added to the soil, probably increasing the tea's sugar levels.The classic Gyokuro tea is shaded under bamboo slates for up to 3-4 weeks, while this Kabuse Sencha or Kabuse-cha (かぶせ茶), is covered by nets for a few days, increasing chlorophyll levels so that the tea color is a deep, rich green while also increasing levels of amino acids like theanine and raising the level of caffeine, mellowing the tea's flavor and imparting a distinct sweetness to both flavor and aroma.The proof of the efficacy of these growing methods is in the flavor and aroma quality of the tea. And the complexity of this tea, its sweet, mellow, vegetal intensity, and higher caffeine levels, are the result of all of the care taken in its manufacture. I boiled water and allowed it to cool to 175-185 degrees, reducing the likelihood of bitterness in the tea's flavor. Using a teaspoon of tea in the cup, I steeped it for four minutes, which seems to be the sweet spot for this green tea. Its aroma was slightly sweet and pleasantly grassy.Its flavor is quite a bit stronger than most green teas, sweet and with a slightly citrus tanginess. There are notes of stone fruit like apricot and peach as well as hints of matcha. It is a delicious and complex green tea. Caffeine levels are higher than usual for a green tea, making this an excellent breakfast or late-afternoon eye-opener. I really enjoyed this Sencha, easily one of the best that I've ever sampled. It's a bit more expensive but its high quality still makes it a great value.

Very good quality green tea
I have had a lot of Japanese green tea. This one is quite special. The color is pleasing bright green. The taste is smooth and not bitter at all. It says that it has a high content of caffeine, which is good as a morning tea. I kind of agree with the refreshing part. It is one of the "covered" green tea that takes a lot of labor to grow. You may want to give it a try.
