Yes, it's fine if you have the tools, but be careful not to lose the screws when taking them apart and reassembling them.

Q: Can I install prescription lenses in it?

no. The frames are rather fragile. I wouldn't trust the frames to hold prescription lens. I use mine for reading or doing cross stitch, that's all.

Q: Can I put a progressive 3mm thick lens on this folding glass? I don't need to use the thin box as I have my other boxes from before

Probably not. When folded, the arms wrap around both sides of the lens and there is no leeway. If you applied a 3mm think lens to these reading glasses it would prevent the arms from folding fully.
