This is a semi-washed coffee hailing from northern Sumatra on the southwest side of supervolcanic Lake Toba. It's unorthodox (for the region) semi-washed, or "honey" processing method allows for freshly harvested coffee cherries to be partially pulped, before spending time mingling with their fruit components, (ala the African natural process) to absorb extra residual sugars. This hybrid methodology results in a flavor packed bean!This coffee has been roasted to a Medium profile, allowing for full expression of its dark caramel body, with brewed tasting notes of molasses cookie and toasted hazelnut. Due to this coffee's unique processing method, an extremely clean, complex, and rewarding cup is achieved.Enjoy brewing this coffee using a Medium Grind size with your favorite pour-over device or home/office drip coffee machine for a delicious cup that can be enjoyed with, or without cream.
