Q: will it fit in an s-video out on easycap?

It should it it is a standard S-video output. The purpose of this adapter is to convert S-video to composite. It does not work well in reverse.

Q: is the s-video connection male or female?

It's Male, as in, it has pins as opposed to holes.

Q: I want this to run to the S-video in on my DVD burner. Will it actually convert a standard composite video signal to S-video for better quality?

I don't know about it being able to improve the quality of the file passing through. But it does allow you to connect items which need composite jacks and you only have svideo available. I used this to connect my older wd media player to a TV which didn't have the yellow video input jack.
