How do you use it specifically if to make a ganache or a curd ?

You can’t use this to make ganache or a curd. You need fresh fruit to make a curd. You could maybe add to a ganache as a topping but it is crunchy and hard so could not be smoothed if in a a ganache

Is this made from just the juice, or is it made from passionfruit juice and seeds?

Hi, it is made from passion fruit concentrate
