The lipase that is used in the supplement industry is from two sources: animal and microbial (fungal). Most of our industry uses microbial since microbial enzymes start to work in the stomach. The more fat that gets broken down there is less lipase your pancreas has to produce when the fats move from the stomach to the intestines. Animal derived enzymes don't work in the stomach nor does our body recognize the supplement sitting in your stomach so our pancreas works just as hard if you had taken no enzyme supplement. 
Microbial lipases are derived from fungal sources like aspergillus niger although keep in mind that this is the growth medium (i.e. like dirt is to the potato). With today's technology, no living fungal cells remain, therefore they cannot initiate fungal colonization or infection in the body. 
NESS products only use microbial enzymes.

Lipase is derived from two sources: microbial (this is the scientific answer whereas a lot of the supplement industry refers to this as plant derived) and animal. NESS only uses microbial enzymes. Microbial enzymes start to work in the stomach where food sits. By breaking down fats (what lipase breaks down) in the stomach, your pancreas doesn't have to work as hard to produce digestive enzymes when the food moves to the intestines. Animal derived enzymes don't start working in the stomach; only in the intestines. Unfortunately our bodies don't see the animal derived enzyme so our pancreas works very hard to break down all of the undigested food. If your pancreas isn't producing enough digestive enzymes, animal derived enzymes are still beneficial, but microbial are far better thus why they are in almost all of the enzyme supplements on the market.
