Q: Should I get the stainless steel or silicone whisk? I have a stainless steel all clad saucier.

I would go with the stainless. I believe the silicone whisk is designed for non-stick pans. Since the main point of the whisk is to loosen the fond and build a sauce (which is best achieved in a non-nonstick pan), I think the stainless is best choice. That said, I don't have a silicone whisk. I just love the durability of the SS whisk. I've been using mine for 20 years or so as a dough whisk and it's held up perfectly.

Q: Can you use one of these to get good results in frothing steamed milk for cappuccinos?

No. Cappuccino-quality milk aeration requires an electric device. This whisk is designed for perfect mixing of liquids, light batters, and gelatins.

Q: Could someone please tell me the length eack, the whisk wires from handle, and the length of the handle itself? Thank you.

The black whisks are 6 1/4 inches and the handle is 4 1/2 inches long.
