Yes, you can write on the sign holder with EXPO Dry Erase Markers.

Q: Would these be suitable if used outside in a covered carport? Or do you have something for that application?

It should work fine it's just plastic

Q: How many pages will fit in this frame? I realize it's designed as a front view display, but wonder if it is capable of holding a multipage letter.

It can handle upto 6 pages of thickness. I use it to display multi page(3-6pages) sales brochures with no problems. I'm going to buy more of these.

Q: If I didn’t want to screw this into the wall, could I use suction cups?

If it's on glass, metal or very smooth wall surface, then suction cups should work. If its painted, textured walls and you don't want holes, then I'd suggest 3M double sided tape. Good luck.
