The air in the pillow

Not sure exactly what the question is, but these air pillows are pre-filled with air and ready to use when received. The Staff at Discount Air Pillows

Would they pop if I used them under a cover of a hot-tub if the water was 80*F ?

I don't think it would make them "pop" but will definitely make the air seep out faster. What are you trying to accomplish? I don't think this is the right application for air pillows, IMO.

How thick are the pillows at its thickest point (presumably middle) when some pressure is applied by flat surfaces at top and bottom?

I ordered these air pillows to use when shipping my Amazon orders. They arrived on a timely basis but at least 50% of them were flat, no air in them. The other ones were inconsistent - some had a lot of air in them and some not very much. I don't recommend this product. Spend a little more money and buy some that come filled with air like they are supposed to be.
