I haven't used the smallest one yet. I assume that's more for drinks. I mostly use the large siv. I'll use the medium when the large is dirty. I'll likely use the medium for sifting eggs and maybe one of these days I'll make jam or ketchup and the medium will come in handy. Thinking about it, I probably should have purchased a single large sifter but I do like having options in case a future recipe calls for it. These tools were made well. I've had them for several months now and they haven't rusted or warped. They've survived the dishwasher several times. They've been excellent for sifting flour and straining pasta water when my colander is unavailable. I love having these around. They make my kitchen and what I cook/bake seem higher quality. The added air and fluffiness the sifter provides has been a huge perk. I like that there's a metal piece across from the handle. Makes it easier to rest on top of a bowl or cup. I haven't applied any stress tests for the sake of a review but I'll likely only ever use these for lighter activities.
