Is the large size prong collar ok for a 3 month old catahoula puppy?

It should be fine, even a bit too long but you can add or take off pieces to fit properly.

what size neck does the large collar fit ?

My dog's neck is 16 inches and I had to remove one notch from the large 21" Star Mark Pro-Training Dog Collar. I prefer this collar than the one I replaced which was the steel collar which is not as comfortable as this hard plastic collar.

would this work on large dogs like pitbull?

As long as it's within the neck measurements (depends on how big your baby is at the time) then yes. As long as the correct is is purchased then it should work. I used it on a boxer. When they pull the pieces act like "teeth" so they grib and causing pinching. Once the pinching took effect my dog always eased up on the pulling. It's a great tool for training purposes.
