Can this cut through bamboo clumps (clumps of thin bamboo stalks)?

Dear, you'd better donot use it to cut the bamboo stalks.

How many bolts/nuts are included? Bot & received 1 of these & only has 1 bolt/nut in box!! I see 2 in picture. Can any seller be trusted these days?

Yes, there should be two screws and two nuts. Definitely need both to hold cutting head in place. Probably easier to just fix using a screw and nut you may have that fits the hole. Even if you must buy at hardware store, easier than requesting replacement from seller.
