thin poha gets mushy easily while thick poha retains its integrity. so in my opinion, thick poha is good where you're going to cook it and want it to remain as individual grains, while thin poha is good for items where you are using a no-cook recipe (dadpe pohe) or don't mind it getting mushy (e.g. in a sweet, pudding kind of recipe)
