how do you change the speed of the patterns? It’s spinning too fast - disorienting to look at

Hi Friend , The speed of the patterns can not change. May be you can try to use "AUTO or PATTERN (RG) MODE", They change slower than "SOUND MODE ". I hope it worked for you.

Can I leave it outdoors during Christmas? Is it waterproof?

Yes, you can leave it outdoors and the unit has to be plugged in to operate with a USB cable , but it's not waterproof.
