Has anybody successfully gotten a snap-on watch back off with these tools?

Yes, but you also have to study the back of the watch closely there is generally a slightly larger groove in one of the corners of the watch back just big enough to get the thinnest pry tool in to pop it off. This is generally true for most watches, but there are some still that you might have to take to a jeweler to get it off

Has anyone managed to remove a Google Pixel phone screen with these?

I have not, but as long as you heat up the screen edge it should work.

Are these tools too hard for openin plastic items suchas a laptops? Would it break them? Would it be best to use plastic tools?

I have used these tools to open an HP laptop to upgrade the ssd. They worked fine, you just have to realize your using a metal tool. Even plastic guitar pick tools can snap a clip if you pry on the wrong area to hard. Use finesse with all of these types of tools. I hope that answers your question.
