What is the carb content per serving?

Malitol is often absorbed more slowly than sugar. So the right answer is what is the carb like effect (raising blood sugar - raising insulin levels) in you personally, today.  And that can change over time (for better or worse) as you build up enzymes etc. to help with digestion. You can tell more with a finger stick glucose test 6, 12, 18 or 24 hours after eating a specific amount (typically 1 oz) while fasting and comparing that to other sugar containing chocolate (30 - 80%) products. Real bodies are complex.  Diet advice is fairly easy by comparison.

Whats the point of sugar free if your using Maltitol? It has a glycemic index of 35!

From my understanding maltitol is a sugar alcohol and does not affect blood sugar.  A sugar alcohol is indicated by an 'ol' at the end of the word.  It is not absorbed .  Also, a glycemic index # of less than 50 indicates it is low on the index. Hope this helps.  Jean

Can these work with paleo diet?

Of course they don't work in a paleo diet! Your hunter gather ancestors never found a sugar-free chocolate chip tree to pick them off of, did they? All chocolate chips are a processed food, and therefore not paleo. Limit yourself to things found in the meat & produce aisles and ignore the rest of the store, if you want to stick to a paleo diet. On a paleo diet, the only sweets you are ever going to have are fruits and certain root vegetables, such as yams
