Why are they so hard I heard they are no good to use when gotten hard

They are not good when they are hard. I won’t buy these again.

Can these be used to help fresh produce last longer?

I do not think so as I do not think this is the purpose for which they are intended. I think you can find products on Amazon intended for keeping produce fresh for longer periods of time. I also saw a new line of containers from Tupperware created for this purpose. Hope this helps. Debbie Meyers also has green bags for this purpose. I tried them. They were not successful for me.
